Chocolate Mousse | Ghost Pepper Crayon

Ingredients:

  • 200g dark chocolate 70%
  • 100g butter
  • 4 eggs
  • 1 tablespoon sugar
  • 1 pinch of salt

Preparation:

  1. Melt the chocolate and butter in a double boiler.
  2. Crack the eggs and separate the whites from the yolks.
  3. Using a whisk, mix the sugar with the egg yolks.
  4. Then, mix the melted chocolate with the butter into the sweetened egg yolks.
  5. Beat the egg whites until stiff, adding a pinch of salt.
  6. Gently fold the egg whites into the mixture with a fork until a smooth mousse forms.
  7. Spoon the mixture into ramekins and place in the freezer for 20 minutes to set the mousse.
  8. Add shavings of Ghost Pepper Crayon!
